August Recipe of the Month – BBQ Pork Fried Rice

Description

Last night I made a BBQ Pork Fried Rice. This meal is filling and delicious.


Ingredients

Scale
  • 1 lb lean ground pork
  • 1 1/2 cups uncooked rice
  • 2 slices bacon {I used turkey bacon, but you can use whatever}
  • 6 fresh basil leaves
  • 1/8 tsp crushed red pepper
  • 1 cup white mushrooms
  • 1/4 tsp paprika
  • 1/8 tsp ground ginger
  • 1/4 cup & 3 tbsp BBQ sauce
  • 1 tomato
  • 2 cups corn

Instructions

 

1. Make the rice according to the package.

2. In a large skillet, cook the pork on medium-low heat.

3. Cut the bacon into small bite-size pieces..

4. Cook the bacon in a small skillet on medium heat. Cook until almost done.

5. Meanwhile, chop the basil leaves..

6. Add the basil leaves to the pork.

7. Chop the mushrooms and tomatoes.

8. Add the mushrooms, bacon, and 3 tbsp of BBQ sauce to the pork {once the pork is fully cooked}.

9. Chop the tomatoes.

10. Add the tomatoes and spices to the pork.

11. Cook the corn. Add the corn and the rest of the BBQ sauce to the pork.

12. Mix everything together really well.

13. Serve in a bowl, because this is messy! Delicious, but messy.
