Ingredients

Scale

For the Roll Dough:

  • 250g all-purpose flour
  • 115 ml lukewarm milk
  • 1 egg
  • 1 tsp yeast
  • ¾ tsp salt
  • 3 tbsp sugar
  • 4 tsp butter
  • Sesame seeds and oregano or herbs of your choice
  • 4 tbsp powdered milk

For the Chicken Filling:

  • Chopped chicken (boneless)
  • Chopped onions
  • Minced garlic
  • Salt – for taste
  • Spices – cumin, paprika, white pepper, black pepper, red chili powder, ginger powder, cardamom powder. Add spices as desired.
  • Tomato – optional
  • Oil to stir fry the filling

Instructions

Step 1: In a small bowl or cup, add yeast and sugar to the lukewarm milk. Mix them nicely.

Step 2: Take another bowl and add flour to it. Add powdered milk, and salt to the flour as well. Mix them nicely.

Step 3: Add the egg to the dry ingredients.

Step 4: Add the yeast-milk mixture to the flour as well. Mix all ingredients together.

Step 5: Once all the ingredients are well mixed, start kneading the dough by hand. The dough texture will be sticky at first, but the sticky texture will reduce as you continue kneading. Add a little bit of flour if needed but avoid adding too much. Once the dough is smooth and not sticky anymore, form a ball shape with the dough. Place the dough in a bowl, brush the dough with oil, and rest it for an hour.

Step 6: Let’s prepare the filling now. Gather all the ingredients.

Step 7: In a small pan add oil and heat it on low-medium flake. Add the chopped onion and minced garlic to it.

Step 8: Once the onion is sautéed, add the chopped chicken pieces to the pan. Add all the spices as well.

Step 9: Stir fry until the chicken is light brown and nicely cooked. Add a little bit of water if necessary to cook the chicken.

Step 10: Take the dough out and divide it into several small even sections.

Step 11: Take a dough section and form it into a ball shape. Flatten the dough ball on a rolling board. Use a rolling pin to flatten the dough ball if necessary.

Step 12: Add the filling right in the middle of the flattened dough ball.

Step 13: Bring the outer edge of the flattened dough ball to the center (over the filling) and smudge the center to secure the filling.

Step 14: Carefully roll the chicken-filled dough ball to make sure that the filling is secured nicely.

Step 15: Brush a little bit of melted butter on the bun and sprinkle some sesame seeds on top.

Step 16: Bake the bun at 375 degrees Fahrenheit, for 15-20 minutes.
