Description

French Onion Grilled Cheese sandwiches are a fun twist on a classic.

Ingredients

Scale
  • 1/2 sweet onion, diced
  • 1 Tb butter
  • Additional room temperature butter for buttering bread
  • 6 slices good bread, sourdough preferred
  • 9 slices Swiss cheese (more or less as needed, depending upon the size of your bread and slices)

Instructions

  1. To begin, saute the diced onion in a skillet with the tablespoon of butter, over medium heat. Cook until the onions are tender and golden. Then set aside for a moment.
  2. To assemble the sandwiches, lightly butter two slices of good bread. (I suggest sourdough because it crisps up well when it is grilled.) Place the buttered sides together as though you are making a butter sandwich.
  3. Spread a spoonful the the caramelized onions over the top.
  4. Top the onions with sliced Swiss cheese.
  5. Place the top slice with the onions and cheese into the heated panini press, and then top with the other slice – buttered sides out. Close the panini press and cook for 2-3 minutes or until golden.

Notes

Tip 1: For cooking this in a skillet, follow all of the directions as stated above. Instead of placing the sandwich in a panini press, cook in a skillet over medium heat. Cook until golden on both sides, turning half way through the cooking process. This will take 4-5 minutes.

TIP 2: Try this with thinly sluiced roast beef or turkey inside!
