Kielbasa Stew

Description

You can’t get much easier than this hearty kielbasa stew, which you can put together in less than half an hour for a great wintertime dinner.


Ingredients

Scale
  • 1 kielbasa
  • 1 medium onion
  • A tbsp cooking oil
  • 4 russet potatoes
  • 1/3 cup flour
  • 2 cups milk
  • 2 cups beef broth
  • ½ tsp garlic powder
  • Approx. ½ tsp each of salt and pepper
  • 2 cups frozen mixed vegetables

Instructions

  1. Dice the onion
  2. Peel and dice 4 russet potatoes.
  3. Dice kielbasa into ½-inch pieces.
  4. Pour a tablespoon of cooking oil into a Dutch oven and heat it. Add the kielbasa and cook over medium heat for about 3 minutes.
  5. Add the onion and cook until the kielbasa is browned and onions are tender.
  6. Add 1/3 cup of flour. Stir it and let it cook for a minute.
  7. Pour in 2 cups of milk and 2 cups of beef broth.
  8. Add the potatoes, 1/2 teaspoon of garlic powder, and salt & pepper, to taste.
  9. Stir in 2 cups of frozen mixed vegetables.
  10. Bring the soup to a gentle boil, then reduce the heat and cook for about 15 minutes or until the potatoes are cooked, stirring occasionally.
