You can’t get much easier than this hearty kielbasa stew, which you can put together in less than half an hour for a great wintertime dinner.

- 1 kielbasa
- 1 medium onion
- A tbsp cooking oil
- 4 russet potatoes
- 1/3 cup flour
- 2 cups milk
- 2 cups beef broth
- ½ tsp garlic powder
- Approx. ½ tsp each of salt and pepper
- 2 cups frozen mixed vegetables
Instructions
- Dice the onion
- Peel and dice 4 russet potatoes.
- Dice kielbasa into ½-inch pieces.
- Pour a tablespoon of cooking oil into a Dutch oven and heat it. Add the kielbasa and cook over medium heat for about 3 minutes.
- Add the onion and cook until the kielbasa is browned and onions are tender.
- Add 1/3 cup of flour. Stir it and let it cook for a minute.
- Pour in 2 cups of milk and 2 cups of beef broth.
- Add the potatoes, 1/2 teaspoon of garlic powder, and salt & pepper, to taste.
- Stir in 2 cups of frozen mixed vegetables.
- Bring the soup to a gentle boil, then reduce the heat and cook for about 15 minutes or until the potatoes are cooked, stirring occasionally.
