- 1 cup of red onion, diced
- 1/3 cup of orange juice
- 3/4 cup of apricot (or apricot-peach) preserves
- 2 tablespoons of corn starch
- 1/2 tsp thyme
- 1/2 tsp salt
- 1 jar of sauerkraut
- 1 pork tenderloin
Instructions
- Dice a cup of red onion.
- In a bowl, combine 1/3 cup of orange juice, 3/4 cup of apricot (or apricot-peach) preserves, 2 tablespoons of corn starch, a half teaspoon of thyme and a half teaspoon of salt.
- Whisk these together. Try to break up the preserves as much as possible.
- To this, add a jar of sauerkraut along with the diced onion. Stir these together.
- Place a pork tenderloin in the bottom of your crockpot. Pour the sauerkraut mixture all over the top. Cook on low for 7 hours.
- Serve with your favorite sides and maybe brochen (German rolls).
