Crockpot Apricot Pork Tenderloin

Crockpot apricot pork tenderloin is a simple supper with a different twist on the classic “pork & kraut.”

How to Make Crockpot Apricot Pork Tenderloin 

To begin, dice a cup of red onion.

 In a bowl, combine 1/3 cup of orange juice, 3/4 cup of apricot (or apricot-peach) preserves, 2 tablespoons of corn starch, a half teaspoon of thyme and a half teaspoon of salt.

Whisk these together. Try to break up the preserves as much as possible.

To this, add a jar of sauerkraut along with the diced onion. Stir these together.

Place a pork tenderloin in the bottom of your crockpot. Pour the sauerkraut mixture all over the top. Cook on low for 7 hours.

Serve with your favorite sides. This recipe for skillet creamed corn would pair very nicely with apricot pork tenderloin.

You might want to serve brochen on the side, or you could try your hand at baking this braided garlic basil bread.

  • 1 cup of red onion, diced
  • 1/3 cup of orange juice
  • 3/4 cup of apricot (or apricot-peach) preserves
  • 2 tablespoons of corn starch
  • 1/2 tsp thyme
  • 1/2 tsp salt
  • 1 jar of sauerkraut
  • 1 pork tenderloin

Instructions

  1. Dice a cup of red onion.
  2. In a bowl, combine 1/3 cup of orange juice, 3/4 cup of apricot (or apricot-peach) preserves, 2 tablespoons of corn starch, a half teaspoon of thyme and a half teaspoon of salt.
  3. Whisk these together. Try to break up the preserves as much as possible.
  4. To this, add a jar of sauerkraut along with the diced onion. Stir these together.
  5. Place a pork tenderloin in the bottom of your crockpot. Pour the sauerkraut mixture all over the top. Cook on low for 7 hours.
  6. Serve with your favorite sides and maybe brochen (German rolls).
