Honey BBQ Chicken Skewers with Grilled Corn make for an easy supper on a hot summer night.
One of the things you want to do when you are grilling with bamboo skewers is to soak them in some water for an hour or so before you use them.
I’ll be honest; I didn’t do it this time. I was in a hurry. You see, we had a storm rolling in and I didn’t want to be out there in the thunder and lightning grilling, so I only soaked them for a few minutes. My skewers caught on fire!
How to Make Honey BBQ Chicken Skewers
First, make some simple barbecue sauce by combining 1/2 cup of ketchup, 1/4 cup honey, 2 tablespoons of Worcestershire sauce, 1/2 teaspoon of black pepper, and 1/8 teaspoon each of garlic powder and onion powder.
Whisk it all together and set it aside for now.
Cut 1 1/2 pounds of boneless, skinless chicken breasts into strips. Each breast will make 3 or 4 strips depending on its size. Place each strip on a skewer.
Heat your grill to 375 degrees or so. Oil your grates before you cook the chicken. Take a small rag and pour some cooking oil on it, then with a pair of tongs, quickly rub the grates with the oil.
Place your chicken skewers on the grill and cook for about 3 minutes on each side. Brush the chicken with the barbecue sauce and cook for another minute. Turn them over and brush them again and cook for another minute or until they are cooked through.
Set your Honey BBQ Chicken Skewers on a platter and cover it tightly with foil to keep the chicken warm while you grill the corn (unless you have a large enough grill to cook them both at the same time).
Cook the corn on your grill until they are slightly charred, turning the ears to cook on all sides. This takes about 5 minutes.
Immediately brush the hot corn with melted butter and sprinkle with salt & pepper if you like.
