This freezer- box eclair cake is all about cold, creamy layers of vanilla custard and chocolate frosting, crunchy graham cracker and drizzles of silky chocolate. It’s also perfect for summer: refreshing, delicious and ridiculously easy Though the word “eclair,” may sound a little intimidating, this dessert could not be more simple to put together. This freezer box eclair cake is 0% pretentious but 100% guaranteed to make you feel fancy when you enjoy it with family and friends.
I love chocolate eclairs, even though I’ve always viewed them as a rare treat for special occasions. It’s just one of those desserts that has always seemed a little out of my comfort level to whip up any old time. What’s great about this recipe is that it captures the flavors of a classic eclair in a quick and easy dessert that is pretty much guaranteed to turn out delicious.
To get started, pull out your baking pan and create a base layer of graham crackers. I know a lot of our readers are gluten-free. If that describes you, you can easily still enjoy this dessert by swapping out regular graham crackers with this gluten free brand.
After you have a layer of graham crackers, you are ready for chocolate. This recipe calls for a thick layer of chocolate frosting, which adds an ultra decadent sweetness to this dessert. Layer it on thickly over the graham crackers.
Once your chocolate frosting covers all the graham crackers, you are going to create the vanilla custard for your Freezer- Box Eclair Cake. We go for a short-cut “custard” with this recipe. This easy method has been the savior for people everywhere who find themselves in need of a quick dessert. First, whip up your vanilla pudding with some cold milk.
Once the pudding is thoroughly whipped and has set, fold in some Cool Whip.
And that’s all there is to the “custard,” layer! Smooth the mixture over the chocolate icing.
You now have all three layers of your dessert, and you simply need to repeat the process one more time. Top the custard with a second layer of graham crackers, followed by a thick spread of chocolate frosting and one more layer of custard. Altogether, you should have laid six layers to your dessert.

This easy but elegant frozen dessert will be your new go-to for hot weather months! Creamy layers of chocolate and vanilla, crunchy graham cracker and sleek chocolate topping make this dessert simply decadent! Perfect for Mother’s Day, Memorial Day, or other summer gatherings!
(1) 9×13 inch Baking Pan
(2) Containers of Chocolate Icing
(2) boxes of Vanilla Pudding Mix (3.4 oz.)
3 cups of Cold Milk
2 and 1/2 cups of Whipped Topping
Magic Shell Chocolate
- Start by covering the bottom of greased baking pan with graham crackers.
- Cover graham crackers with a generous amount of chocolate icing. I used nearly an entire container for the first layer.
- Place pudding mix and milk into a large mixing bowl.
- Whisk until well combined and let sit for 5 minutes.
- Fold in whipped topping.
- Place half the mixture on top of icing and smooth out.
- Place another layer of graham crackers on top and another generous amount of icing.
- Use the rest of your pudding mixture on top and smooth out.
- Drizzle with Magic Shell chocolate.
- Place in freezer for 3 hours.
- Serve and enjoy!
