Description

These Crockpot Salsa Chicken Tacos made in the crockpot are the perfect dinner for those busy homeschool days when you hardly have time to gather your thoughts.


Ingredients

Scale

For the chicken

  • 2 pounds boneless, skinless chicken (breasts or thighs)
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 cup salsa

For the tacos:

  • tortillas
  • cheese
  • sour cream
  • diced tomatoes
  • shredded lettuce

Instructions

  1. Place chicken in crockpot.
  2. Sprinkle in a half teaspoon each of salt and pepper and a teaspoon each of cumin and chili powder.
  3. Add in a cup of salsa.
  4. Cook on low for 7-8  hours or high for 4 hours.
  5. Pull the chicken apart with 2 forks.
  6.  Serve it on tortillas or in taco shells.
  7. Top with your favorite taco toppings.
