Simple Garlic Shrimp over Pasta

Description

This easy garlic shrimp over pasta has the flavor of a restaurant dish, but without the added pull on your budget. (Plus, you don’t have to dress up to go out; you can cook and eat while wearing comfy yoga pants … or whatever is your style.)


Ingredients

Scale
  • One bag of shrimp
  • Garlic, to taste
  • 1/2 stick to 2 sticks butter
  • Olive Oil for frying
  • Scallions
  • Pasta (enough for your family)
  • Chicken broth (optional, see notes)

 


Instructions

  1. In a large stock pot, boil pasta (the type of your choice).
  2. Take a saucepan and put it on medium heat. Drop in ½ to two sticks of butter and let it slowly clarify.
  3. Once the butter is nice and separated, put in freshly chopped garlic (a couple cloves to a bulb). Let the garlic simmer on low heat.
  4. Once your pasta is cooked to your liking, drain it and set in a nice serving bowl.
  5. Add the shrimp piece by piece to the clarified butter. The butter can be on a slow simmer. Slowly cook the shrimp; once it has turned color, it is done. If needed, flip the shrimp to get both sides cooked.
  6. Toss the butter, garlic, and shrimp in with the pasta, and serve right away!

Notes

The original recipe calls for 2 sticks of real butter. We stick with half to one stick and use chicken broth, which adds some great flavor and cuts the fat. A 1/2 stick of butter and a cup or so of fresh broth is delightful.
