Simple Garlic Shrimp
You may not feel like a Hip Homeschool Mom serving Mac and Cheese at the end of the day with your yoga pants and pony tail. But almost in the time it takes to make a package of Mac n Cheese – you can create a dining out delight in less than $15.00 for two whole meals… Simple Garlic Shrimp over Pasta.
In a large stock pot, boil your favorite seafood pasta. Today – it is thick spaghetti noodles.
Take a nice sauce pan, and put it on medium heat. Drop in 1 stick of butter, let it slowly clarify. One the butter is nice and separated, put in as much fresh chopped garlic as your family can stand. We use a whole head of garlic. Let the garlic simmer on low heat. This day, I cut the garlic ahead of time and put it in a dish of Olive Oil to infuse flavor. Yum O.
The Freezer Shrimp seems to work best. From Costco it runs around $11.00 and it will make two family meals of 6-7 shrimp each for 4 people. This is a Costco bag of Shrimp that hubby purchased at our damaged and dinged market for less than $7.00.
Once your pasta is cooked to your liking, drain and set in a nice serving bowl.
Add your shrimp piece by piece to the clarified butter. The butter can be on a slow simmer. Slowly cook the shrimp – once it has turned color, it is done. Could be as little as 3 minutes. You might need to flip the shrimp with a tong or fork to get both sides cooked.
Toss the butter, garlic and shrimp in with the pasta, and serve right away!

Original recipe calls for 2 sticks of real butter. We have used Chicken Broth when we were working on Fat Free. A 1/2 stick of butter and a cup or so of fresh broth is delightful.
If you wanted to be Hip – and order take out from Pastini – Each serving would cost over $10.00 – This way you get to keep the yoga pants and the change.
