Ingredients

- 1/2 teaspoon salt,
- 1/2 teaspoon ground black pepper,
- 1/2 teaspoon thyme,
- 1/2 teaspoon coriander,
- 1/2 teaspoon garlic powder,
- 1/2 teaspoon onion powder,
- 1/2 teaspoon paprika
- 1/2 teaspoon parsley
- 1/8 teaspoon cayenne pepper
- 2 boneless, skinless chicken breasts
- 1 Tb butter
- 1 Tb extra virgin olive oil
- 1 lime
Instructions
- In a small dish combine the salt, ground black pepper, thyme, coriander, garlic powder, onion powder, paprika, parsley and cayenne pepper. Mix them together. Set aside for now.
- Using a fillet knife, cut two boneless, skinless chicken breasts in half into 4 cutlets.
- Sprinkle half of the spice mixture over the chicken and rub it on. Turn the cutlets over and rub the other half on the other sides.
- In a large skillet, heat the extra virgin olive oil and butter over medium high heat. Cook the chicken for about 3 minutes on each side or until slightly golden and cooked through.
- Remove the cutlets to a serving platter and drizzle with the juice of the lime.
