Easy Weeknight Sloppy Joe Tater Tot Casserole

Sometimes you need a comforting meal that you can whip up in no time on busy weeknights, and this is one of those recipes! Everyone in the family will enjoy this savory, hearty casserole with meat, sauce, cheese and potatoes. If you have young kids who love to help in the kitchen, this would also be a great one to teach them how to make–it’s that easy! We also love that this recipe is gluten free, since we know many of our readers follow a gluten free lifestyle. Next time you’ve got a crazy busy night, I hope you’ll give this Sloppy Joe Tater Tot Casserole a try!

This is one of those “dump and bake” recipes that you can assemble ahead of time and throw in the oven right before serving. And to be perfectly honest, the “assembling” part doesn’t take too long, either! Despite the fact that this is a quick and easy recipe, it is super delicious and is a big hit–especially with kids!

The only step you have to do before assembling is brown your ground beef in a hot skillet until it’s cooked thoroughly. When it’s cooked, place it in the bottom of a large casserole dish.  Next, pour your favorite sloppy joe sauce all over the meat and mix it up.

Then, you will sprinkle grated cheddar cheese all over the top of the casserole (extra sharp is my favorite!)

Lastly, finish this off with a plenty of tater tots. Pre-heat your oven to 400 degrees and slide the whole casserole in to bake for 25 minutes. As the cheese melts, it will hold the layers of the casserole together, and the tater tots will get nice and crispy on top.  Once it’s baked, serve it up and enjoy!

You won’t believe how easy and delicious this recipe is! Do you plan to give it a try on one of your busy weeknights?
