Easy Shredded Chicken Sandwich Recipe
When we are on the run taking one kid here, another there, plus school, work, and whatever else we moms have on our plates, dinner sometimes slips our minds, right? Well, it does mine more often than I want to admit. So I made sure to add this recipe to my arsenal of quick ‘oops I forgot about dinner’ recipes.
Easy Shredded Chicken Sandwich Recipe
Pro mom tip! Once a month I will cook up quite a few chicken breasts, drumsticks, thighs–whatever kind of chicken I can get my hands on–and then shred the meat, divide it into freezer bags, and freeze them for quick meals like this. Then on a busy night, I can pull it out and defrost it in the microwave if I didn’t remember to put it out in that morning to thaw. I can then whip up many easy weeknight recipes like this Shredded Chicken Sandwich.
This recipe calls for cream of mushroom soup. If your family doesn’t like cream of mushroom soup or if you don’t have an on hand, just use cream of chicken soup instead. It also works with chicken stock and sour cream in a pinch.
Ingredients
3/4 lb Shredded Chicken
1 can Cream of Mushroom Soup
1/4 tsp Poultry Seasoning
16 Club Crackers
1/2 cup Water
Directions
First, crush the club crackers into a medium saucepan.
Then add the all remaining ingredients and stir to mix well.
Heat over low heat until fully warmed, stirring frequently until combined well.
Serve on buns.

These are a common staple in NW Ohio, except we use half cream chicken soup and half cream celery soup.
