Chicken Joes
Sometimes you are in the mood for a fun sandwich but are looking for something a little different. How about a crockpot “sloppy joe” made from chicken? Chicken Joes are a fun alternative.
How to Make Chicken Joes
To begin, heat a couple tablespoons of extra virgin olive oil in a large skillet over medium heat. Add in two pounds of ground chicken along with a diced onion and diced green bell pepper. Cook these until the chicken is no longer pink, and the peppers are just tender.
Remove from heat.
Place the chicken mixture in a crockpot that has been sprayed with non-stick cooking spray. Pour in 1 can (15 oz.) tomato sauce.
Now for some seasonings. Add in a teaspoon of hot paprika.
Along with a half teaspoon each of roasted coriander, garlic powder, salt and pepper, three tablespoons of tomato paste, and a tablespoon each of Worcestershire sauce and apple cider vinegar.
Finally, add in 3 tablespoons of honey. Stir it all together and let it cook on low for 4-5 hours.
When it’s done cooking, place it in a fresh hamburger bun or hoagie roll, along with a slice of cheese (provolone is a favorite in our home) and enjoy!
