Cucumber Greek Yogurt Salad Dressing
I am addicted to salads, which are especially fun to make if you have your own garden full of fresh produce. But even if you don’t, this cucumber Greek yogurt salad dressing is a cinch to make, and goes great on top of pretty much any kind of fresh green salad!
This Tzatziki Sauce-inspired dressing is a terrific use over salads of all kinds!
Prep for Cucumber Greek Yogurt Salad Dressing
The trick to making dressing with cucumbers is all about the prep.
You have to dice the cukes first, then salt them and let them sit in a colander for a while. The salt will draw out the water, and then you can pat them down with a paper towel.
If you don’t do this, then your dressing will come out too runny.
For this recipe, you can dice three small garden cucumbers or Persian cucumbers from the store. If you are using the large cukes from the grocery store, you may only need one.
Making Cucumber Greek Yogurt Salad Dressing
Once you have drawn out some of the water, you can stick them into a blender or food processor and add:
Just a few ingredients
And that’s it. Just blend, and go!
You can use it to top a salad right away, or cover it and let it rest in the fridge for a couple of hours to let the flavors come out a bit more.
This dressing is ideal on top of a fresh salad with olives, hearts of palm, fresh tomato, more cucumbers, and whatever else you have in the house to throw on it!
