Easy Chicken Fajitas Recipe with Low Carb Option

I want to share one of my favorite easy weeknight meals with you today. This easy chicken fajitas recipe is our go-to in our house. While most of the time we will use fresh produce, I always keep a cheater bag of frozen sliced peppers and onion and grilled chicken strips in the freezer for a last-minute meal!

Easy Chicken Fajitas Recipe

Here I will share the fresh way we like to make the meal, but remember you can do it with ingredients from the frozen section in a pinch too!

Ingredients

2  peppers (choose red and yellow)
1 medium onion
2 chicken boneless skinless chicken breast
flour tortillas*

*If you want your meal to be low carb, use lettuce leaves instead of the flour tortillas.

Fajita Seasoning

1 tsp of salt
1 tsp of pepper
3 Tbsp of chili powder
2 Tbsp of paprika
1 Tbsp of brown sugar
1 Tbsp of minced Garlic

Directions

First, start with cutting up your peppers. If you slice the top off, you can then pull out the middle and should be almost clean of all seeds. Then you want to slice the peppers thin.

Then slice up your onion in long strips too.

Mix up your spices. Add the chili powder, paprika, brown sugar, garlic, salt, and pepper into a small bowl and mix.

Spray your baking sheet with nonstick spray.

Lay your veggies on a baking sheet. sprinkle with about half the seasoning. Toss them around a little bit and pop them in the oven at 350 for about 15 minutes.

While your veggies are cooking start your chicken. Rub the fajita seasoning on both sides of the chicken. Warm your frying pan with a little olive oil in it. Then add in your chicken breast. Cook on both sides for about 10 minutes each on a medium to low heat depending on your stove.

Once the chicken is cooked through and your veggies are tender. Take out and let cook for a few minutes. While it’s cooling. I like to heat up our tortillas on the frying pan I was using to cook the chicken. You can also warm them in the microwave for 15 seconds. (Or if you’re going for the low carb option, just make sure your lettuce leaves are washed and ready.)

Now chop up your chicken and make your fajitas. Add some cilantro or sour cream if you’d like! Enjoy.
