St. Patrick’s Day Reverse Chocolate Cookies
If you are looking for a tasty way to celebrate St. Patrick’s Day, you’re in luck! These Reverse Chocolate Cookies are perfect for celebrating this Irish (and Irish-American) holiday. They are full of delicious chocolate and caramel flavor and contain little bits of green-coated chocolate (so you avoid those pesky pinches). And if you fall in love with the caramel chocolate flavor of these cookies, you can always recreate these delicious treats throughout the year (with different colored M & Ms, depending upon the occasion!)
The first thing you need to do for these cookies is sift together all of the dry ingredients into a bowl: flour, cocoa powder, baking soda and salt. Then set these aside, temporarily.
Next, in a medium-sized bowl, cream together egg and both sugars. Add in the vanilla and stir it all together.
Next, add your melted (and cooled) semi-sweet chocolate and butter into the wet ingredients. The chocolatey-ness of the batter is what makes this a “reverse” chocolate cookie, meaning that there is so much chocolate in the cookie part itself (and we’ve replaced the chocolate chips of a more traditional cookie with caramel chips, instead.) Basically, this cookie is full of yummy surprises!
After the melted chocolate and butter have been added and combined, slowly add in your dry ingredients.
Fold them in until a soft cookie dough forms. Once the dough is consistent, fold in the caramel chips and green chocolate-covered candies (I use M & Ms).
With your dough done, cover the bowl with plastic wrap and stick it in the refrigerator for 30 minutes. This will make it easier to work with, later!
After your dough has had time to chill, remove it from the refrigerator. Line a baking sheet with parchment paper and preheat the oven to 350 degrees F. Roll out cookie dough balls, keeping them about 1 inch in diameter each. Set them gently on the lined baking sheet, about 2 inches apart from each other.
Bake your cookies for between 10 to 12 minutes. Then allow to cool on a wire rack before serving. Enjoy!

¼ cup high quality cocoa powder

3 ounces semi-sweet chocolate, melted and cooled down
1 stick butter, softened
¾ cups caramel chips
¾ cups green chocolate-covered candies
Instructions

Slowly add dry ingredients into wet ingredients and fold until a soft cookie dough forms.
Fold in caramel chips and green chocolate-covered candies.
Cover bowl with plastic wrap and refrigerate for 30 minutes.
