I have a garden every summer, and one thing I can almost always count on is a huge harvest of zucchini. Zucchinis are great for all kinds of recipes! I like to make zucchini bread, zucchini “noodles,” roasted zucchini, and anything else I can think of to make. If you have an abundance of zucchini, try this recipe! You may also want to share zucchini with friends and relatives who will make good use of it.

To make this recipe, which serves 4 people, you’ll need the following ingredients:
- 2 medium-sized zucchinis
- ½ c parmesan cheese (from the shaker can)
- ½ c pork rind crumbs
- 1 tsp basil
- 1 tsp thyme
- 1 egg, beaten
- salt and pepper to taste
Here’s how to make it:
First, preheat the oven to 400 degrees.
While the oven preheats, cut the zucchini into ¼ inch thick slices.
Place about 2 ounces of pork rinds into a food processor and process into crumbs. Alternatively, you can place the pork rinds into a Ziploc bag and break them into crumbs with a rolling pin.
Place ½ c of pork rind crumbs, the parmesan cheese, basil, thyme as well as salt and pepper (to taste) in a bowl and mix well.
Place one beaten egg in a separate bowl.
Dip the sliced zucchini into the egg, and then dredge in the crumb mixture (as seen below) before placing them onto a lined or well-greased baking sheet.
Bake for 20-25 minutes until the zucchini is softened and the coating is crispy.
