Chocolate Chip Muffins – Large Family Recipe

One thing I do to make mealtimes a bit easier for our large homeschooling family is to make freezer meals.  I even do this with some of our breakfast recipes.

On a monthly basis we will usually make pancakes, waffles, and muffins to freeze so we have them on hand for the entire month.

Chocolate chip muffins are one of our family’s favorite breakfasts – not only are they yummy, but they are quick and easy.  Just take them out of the freezer the night before, and they are ready to go in the morning.

Below you will find a recipe for chocolate chip muffins that is perfect for a large family, or if you want to freeze a bunch, or both.

Chocolate Chip Muffins – Large Family Recipe

Description

The best chocolate chip muffin recipe ever!! Double or triple the batch to freeze some!


Ingredients

Scale
  • 3.5 cups all-purpose flour
  • 1 cup granulated sugar (more if you like them sweeter)
  • 4 tsp baking powder
  • 1 tsp salt
  • ¼ tsp cinnamon
  • 4 large eggs
  • 1 cup whole milk 
  • ½ cup vegetable oil
  • 4 tbsp unsalted butter, melted
  • 2 tsp vanilla extract
  • 2 cups semi-sweet chocolate chips (either regular or the minis will work. Or both!)

Instructions

Combine flour, sugar, baking powder, salt, and cinnamon in a mixing bowl.
Combine eggs, milk, vegetable oil, butter, and vanilla extract.
Slowly mix the dry ingredients and chocolate chips into the wet ingredients
Preheat the oven to 375ºF
Fill muffin pan with 12 muffins liners and add 5-6  tablespoons of batter
Bake for 16 minutes or until ready. You can check by inserting a toothpick in the center to see if it comes out clean.

 


Notes

This is why I love double ovens. Continue baking until you finish the batter!!

      I’d say you could leave them in the freezer for up to 3 months. I usually make enough to last a month.
