Easy One Pot Spinach Parmesan Pasta Recipe
One-pot dishes save time at the sink and make tossing together dinner a breeze. I used to make pasta in one pot, sauce in another, and if I was using meat-yep another pan. But then I discovered the joy of tossing everything together in one big pot to get the same result-sometimes even better because the flavors really get cooked in! Easy One-Pot Spinach Parmesan Pasta Recipe
My obsession with one post meals started when I read One Pot: 120+ Easy Meals from Your Skillet, Slow Cooker, Stockpot, and More. You just can’t beat the light clean up of only one pot and a few plates!
I make this for our meat-free nights, but you could easily stir in ½ -¾ lb. cooked ground beef or sausage to create a heartier dish. The other reason I love this dish is that I usually have all the ingredients on hand at all times in the pantry or fridge, so it’s easy at the end of a long day to whip up a tasty dinner.
Ingredients
10 oz. spaghetti or angel hair pasta
½ cup onion, diced
1 diced green pepper, diced
10 ¾ diced tomatoes
2 cups chicken broth
8 oz. frozen spinach
½ cup Parmesan cheese
2-3 cloves garlic, crushed
1 tsp. Oregano
½ tsp. salt
1 tsp. Black pepper
1 ½ tsp. Olive oil
Directions
Place onions, green pepper, garlic, and olive oil in a large pot over medium heat. Saute until softened and they begin to become translucent.
Simmer for 7-8 minutes or until pasta is softened and almost all the liquid has been absorbed.

Instructions

I like to buy pre-diced bags of mixed peppers and onions in the frozen section at Walmart-it saves time and they are very cost effective.

Add canned diced tomatoes, broth, oregano, salt, and pepper-bring to a boil on high.

Break pasta in half and place in liquid, when fully submerged cover with lid and reduce heat to a simmer.

Stir in frozen spinach and parmesan cheese. If you are adding meat, this is the time to stir it in as well.

Simmer for 7-8 minutes or until pasta is softened and almost all the liquid has been absorbed.

Serve immediately with a fresh sprinkling of Parmesan cheese.
