Pumpkin Seed Flax Granola

Sharing is caring!

Pumpkin Seed Flax Granola

This homemade pumpkin seed flax granola recipe is loaded with healthy ingredients, sweetened with fruit, and is perfect for adding to your yogurt, smoothies or just for snacking. I experiment with different granola combinations and this one is amazing. I really love it. I make this granola recipe to be more loose. I like it this way because it keeps the sugar low and is more like breakfast cereal to me. If you want to make it stick together, I’ll include that option as well.

Pumpkin Seed Flax Granola

I love pumpkin seeds, you can find them in the organic food section with other seeds and nuts or if you are super rural like me, you can order them off amazon! You’ll find the flax seeds there too. This granola is without nuts, so it is allergy friendly for most. The ingredients are so healthy and good for you! If you look at pre-made granola bars, you know how much sugar is added.

Whole oats are among the healthiest grains on earth. They are a gluten-free whole grain and full of important vitamins, minerals, fiber and antioxidants.  Studies have found that oats have many health benefits, including weight loss, lower blood sugar levels and a reduced risk of heart disease. So not only is this granola yummy, it is good for you too!

A homemade pumpkin seed flax granola recipe loaded with healthy ingredients & sweetened with fruit. Perfect for adding to yogurt, smoothies or snacking.

4 cups whole grain oats – I like Bob’s Red Mill
1 cup pumpkin seeds
1 cup organic raisins
⅓ cup flax seeds
to 1 cup dried apples
1 tsp of my homemade pumpkin pie spice mix
4 TBSP coconut oil

Mixing Bowls

Baking Sheet

  1. Mix all ingredients in a large bowl, except the oil. Be sure to evenly coat the granola with the spices.
  2. Once well coated then stir in melted coconut oil and toss until lightly covering all the granola. It should all get soaked up leaving a very light coating that is barely noticeable. Your granola should never be greasy so start slowly.
  3. Bake on a baking sheet at 350 degrees for 20 minutes tossing every 5 minutes till golden. Do not let scorch!
  4. Let cool.
  5. Store in an air tight container.

To make your granola stick together, stir together 1/4 cup honey, 1/4 cup of maple syrup, 1/4 cup coconut oil and 1/2 tsp salt. Warm these ingredients for a few seconds to help them mix better!
