Rainbow Fruit Salad for St. Patrick’s Day

There are a lot of tasty ways to celebrate St. Patrick’s Day (coming up on March 17), but not all of them are healthy and delicious! Today we’re going to show you how to make a super easy, beautiful rainbow fruit salad to enjoy on St. Patrick’s Day (or any time you’re feeling extra fancy about fruit.) This tray is perfect to take to a gathering. You can also make it with the kids and enjoy the fruit tray as a family.

This Rainbow Fruit Salad for St. Patrick’s Day will certainly make any gathering feel a bit more magical (especially if you include the marshmallow clouds and golden Rolos at the end of the rainbow)!

What you need for the rainbow fruit salad:

Of course, you need fruit to make this beautiful tray! The amount of fruit you need depends on how big you want to go and how many people you are sharing with! I suggest choosing the fruits below so you can create a rainbow that stays close to the traditional color order (ROYGBIV).

  • Strawberries
  • Cantaloupe
  • Pineapple
  • Green grapes
  • Blueberries
  • Black grapes

In addition to the fruit, you will also need:

  • Marshmallows
  • Wrapped Rolos candies

Once you have all your fruit washed, slice the tops off the strawberries. You may want to slice the strawberries, grapes, and pineapple, too, depending on the ages you will be serving this to (if you are serving kids, I always suggest slicing the grapes in half).

Next, you’ll follow the top curve of your serving plate or platter and arrange the strawberries in an arc along the edge of the plate. This is the top row of the rainbow fruit salad.

Go all the way around, until you almost form a complete circle.

Then you’ll repeat this process, creating an arc with each type of fruit until your plate is full.  You’ll want to arrange the arcs according to color order, so it will go as follows: strawberries, cantaloupe, pineapple, green grapes, blueberries, and black grapes.

At first, your pieces of fruit may slide around on the plate. Don’t worry; just push them back into place. As the plate starts to fill up, things should start to stay in order. When you’ve arranged each fruit in its place, you’ll have a beautiful rainbow! How easy is that?

You can leave your rainbow fruit salad tray as is, or, if you want to be a little more on-theme for St. Patty’s, you can use your marshmallows and (wrapped) Rolo candies to create the impression of clouds and the traditional “Pot O Gold” at the end of the rainbow!

Serve your charming end result as is, or present your guests with bamboo skewers so they can make their own, mini-rainbow kabobs to enjoy!

Looking for a delicious and better-for-you snack to enjoy during St. Patrick’s Day? This colorful fruit platter arrangement is easy, beautiful, tasty, and healthy! This is a great one to take to a party and/or make with the kids.


Ingredients

Note: The quantity needed will depend on the size of the plate or platter.

Strawberries

Cantaloupe

Pineapple

Green grapes

Blueberries

Black grapes

Marshmallows

Wrapped Rolos candies


Instructions

  1. Wash and dry the fruit. Cut into bite-size pieces if desired.
  2. Arrange the fruit, beginning with the strawberries, along the edge of the plate. Continue adding the fruit, row by row, in the order listed (in the ingredients section). If the fruit slides towards the center, gently push the fruit back towards the edge of the plate and continue adding rows until the rainbow is complete.
  3. Add a small bowl on each side of the rainbow with one holding marshmallows and the other holding the Rolos candies. If preferred, place the marshmallows and candies directly on the plate.
  4. Serve with bamboo skewers if desired to allow guests to create their own rainbow kabob!
