Yogurt Parfait

A Note on Making the Jell-O into Mousse:
Turning Jello into something frothy and mousse-like is easy and is an improvement on the original thing, in my opinion. The technique involves partially setting the Jello and then whipping it to incorporate air, creating a light and fluffy texture.
Basically, you’ll prepare the gelatin according to the directions on the package and then, when it’s partially set, whip it on high for a few minutes. You can also add whipped cream if you want it to be lighter and more creamy.
Ingredients for Yogurt Parfait:
- 3 oz. orange gelatin
- 1 1/2 cups plain Greek yogurt
- 5-6 strawberries
- 1 tbsp. almonds
- 2 mint sprigs to serve
Instructions:
1. Prepare the Jell-O according to the instructions on the box. Let it set, but not fully.
2. Blend the Jell-O to give it more of a mousse-like texture. Pour it into two wide glass cups or small clear glassbowls. Chill it in the fridge for about one hour.

3. Wash and cut the strawberries into thin slices. Place the slices in the cups or bowls that you have chosen. Spoon the yogurt into the center of the bowl.

4. Continue to spoon the yogurt all the way to the top of the glass cups. Decorate your yogurt parfait with nuts, mint, and more strawberries. If you’re hoping to make this more of a healthy breakfast, you might add chia seeds or flax seeds. If you are making this into a dessert, you could shave some bits of chocolate on top as a pretty garnish.
