Egg in a Bread Basket: A Kid-Friendly Breakfast (or Brunch)

Some mornings call for breakfast that looks fancy… but requires approximately zero fancy effort. Enter the Egg in a Bread Basket—a toasty, buttery, veggie-filled bite that feels special and comforting all at once. If you’ve ever wanted a recipe that your kids can help assemble, uses pantry staples, and magically turns a simple egg into something adorable, this is it.

These little baskets bake up in the oven, which means no flipping eggs on a skillet, no juggling multiple pans, and no standing over the stove while everyone wanders in asking, “Is breakfast ready yet?” Just prep, fill, bake, and serve.

Let’s get into it.

What Is an Egg in a Bread Basket?

Think of this as the slightly fancier cousin of the classic “egg-in-a-hole.” Instead of cutting a circle out of a slice of bread, we create an actual basket from bread—crispy on the outside, soft inside—then nestle a whole egg inside, along with whatever veggies your family loves. It’s hearty, customizable, and perfect for picky eaters because you can make each basket a bit different.

Also: they’re extremely cute. And that counts.

Ingredients You’ll Need

For Each Bread Basket:

  • 1½ slices of bread
  • 1 egg
  • Chopped vegetables of your choice (bell peppers, onions, mushrooms, spinach, tomatoes—whatever you’ve got)
  • Salt, to taste
  • Spices of your choice (pepper, garlic powder, paprika, Italian seasoning, etc.)
  • Melted butter
  • Optional: shredded cheese
  • Optional: oregano for sprinkling

How to Make the Bread Basket Crust

You’ll need either small round cake tins or a large cupcake/muffin tray to shape your baskets.

Step 1: Shape the Bread Basket

Tear or cut the bread into pieces and press them into your tray, overlapping slightly so that they form a little cup. Don’t worry if it looks rustic—once baked, it turns beautifully golden and crisp.

Step 2: Brush with Butter

Coat the inside surface of your bread basket with melted butter. This helps everything crisp up and gives the final dish that irresistible toasty flavor.

Step 3–4: Prep Your Veggies

Chop your chosen vegetables into small pieces and toss them with salt and the spices you like. Mix everything together well so the flavors combine.

Step 5: Add Veggies to the Basket

Scoop a small amount of the veggie mixture into your bread baskets. Make sure to leave space—about halfway up—because we need room for the egg.

Step 6 (Optional but delicious): Add Cheese

Sprinkle a bit of shredded cheese on top of the veggies. It melts into a gooey layer under the egg and adds extra richness.

Step 7: Crack an Egg on Top

Gently crack one egg into each basket. If you want to be extra fancy (and who doesn’t?), sprinkle a pinch of oregano on top.

Step 8: Bake to Perfection

Bake your assembled baskets in a preheated oven at 350°F for 16 minutes.

If you prefer your yolks runny, check at the 14-minute mark. If you’re a firm-yolk family, give it another minute or two.

Ingredients

  1. Bread – 1 and a half piece for 1 basket
  2. Egg – 1 for each basket
  3. Vegetables – of your choice
  4. Salt – for taste
  5. Spices – of your choice
  6. Melted butter

Instructions

  1. We’re using small, round cake trays as the bread basket mould but you can also use large cupcake tray. Prepare a slice of bread (or 2) into pieces to make a basket shape inside the tray.
  2. Apply a coat of melted butter on the top surface (inner) of the bread basket shape inside the tray.
  3. Chop the selected vegetables into small pieces and mix them with the spices of your choice. Add salt to the mixture as well.
  4. Mix the chopped vegetables, salt and spices together nicely.
  5. Add some mixed vegetables in the bread basket. Do not fill the whole basket because we need to keep enough space for an egg.
  6. This step is optional, but you can add some cheese on the top of the vegetables.
  7. Add an egg in the bread basket and sprinkle some oregano on the top of the cracked egg.
  8. Bake the egg bread basket in a pre-heated oven, to 350 degrees Fahrenheit, for 16 minutes.
