Molasses Pound Cake

If you’re looking for a dessert that tastes like nostalgia wrapped in a warm blanket, this Molasses Pound Cake is exactly that. Rich, dark, beautifully spiced, and impossibly moist, it’s the kind of old-fashioned recipe that feels like it came straight out of Grandma’s recipe box. Molasses has a way of doing that—bringing depth, warmth, and a deep caramel flavor that modern cakes can’t quite match.

And the best part? This cake is wonderfully simple. One bowl, a whisk, a handful of pantry staples, and a bit of patience while it fills your home with that unmistakable gingerbread aroma.

Why I Love Molasses Pound Cake

Molasses has been used in baking for centuries, especially in early American kitchens, where every ingredient had to stretch a little farther and flavor was never wasted. It lends this cake its signature deep color, rich taste, and soft crumb. Pair that with spices like cinnamon and ginger and you have a loaf that practically defines cozy baking.

This molasses pound cake is perfect for:

  • Fall gatherings
  • Holiday dessert tables
  • Afternoon coffee or tea
  • Homemade gifts for neighbors or church friends
  • A simple “just because” treat

Serve it warm with butter, drizzle it with a simple glaze, or enjoy it plain—the flavor stands beautifully on its own.

Ingredients

  • ½ cup butter, softened
  • 1 egg
  • ½ tsp cinnamon powder
  • ½ tsp ginger powder
  • ⅔ cup molasses
  • ⅓ cup sugar
  • 2 cups flour
  • 1 cup hot water
  • 1 tsp baking powder

How to Make Molasses Pound Cake

Step 1: Prep the Butter

Start by adding your softened butter to a mixing bowl. Using a whisk, beat it until it’s smooth and creamy. (Room-temp butter is key for that velvety texture.)

Step 2: Add the Egg

Crack in the egg and whisk again until fully combined.

Step 3: Mix in the Flavor

Add the molasses, sugar, ginger, cinnamon, and baking powder. Whisk everything together until the mixture is glossy and well incorporated.

Step 4: Add the Flour

Pour in the flour and mix until the batter becomes thick. Don’t worry—it’s supposed to look dense at this stage!

Step 5: Loosen the Batter

Slowly add a few tablespoons of hot water at a time, mixing well after each addition. Once all the water is added, your batter should be on the thinner side—smooth and pourable.

Step 6: Bake

Preheat your oven to 350°F. Line a baking pan with parchment or lightly grease it. Pour in your batter and bake for 30–40 minutes, or until the top springs back lightly and a toothpick comes out clean.

Let your molasses pound cake cool for a bit… if you can resist slicing into it immediately.
