Vegan Strawberry Crinkle Cookies

Hey there, mommas! Today, I want to share a really easy recipe that’s perfect for Valentine’s Day: Vegan Strawberry Crinkle Cookies.

These soft, chewy cookies only require a few ingredients. As a vegan recipe, you’ll need flax eggs. If you want the non-vegan variety, simply use normal eggs.

If your kids are having a homeschool Valentine’s Day party, these will be the ideal treat to take to the party. Your kids can help prepare these cookies, as the recipe is a simple one.

Ingredients for Vegan Strawberry Crinkle Cookies:

  • 1 Box Strawberry Cake Mix
  • 2 tablespoons ground flax seed and 6 tablespoons water (to make “2 Flax eggs”)
  • ⅓ C. Vegetable Oil
  • ½ C. Powdered Sugar

How to Make Vegan Strawberry Crinkle Cookies:

1. Preheat the oven to 375 degrees. Line two cookie sheets with parchment paper, and then set it aside.

2. In a small bowl add 2 tablespoons ground flax seed and 6 tablespoons water. Let it sit for 10 minutes.

3. In a medium-sized bowl, add the strawberry cake mix and flax eggs. Mix them together.

4. Add oil and continue to combine until dough forms. (Some strawberry cake mixes call for ⅓-½ C of oil. Follow the directions on the box for these cookies, too.)

5. Using a 2-tablespoon scoop, form a dough ball, and place it on the prepared parchment-paper-lined cookie sheets. Form 18 dough balls.

6. Place each dough ball in powdered sugar, and roll around until it is completely coated.

7. Place the powdered sugar dough ball back onto the prepared parchment paper, and continue to cover the rest of the dough balls with powdered sugar until all 18 are coated.

8. Bake in the oven for 15-17 minutes until puffy, dry, and the powdered sugar has cracked.

9. Enjoy your vegan strawberry crinkle cookies! They’re best when eaten immediately, but you can also store them for a few days covered, in a cool and dry place.

Notes: If you don’t want vegan strawberry crinkle cookies but the non-vegan type of cookie, they can be made with eggs. SImply follow the directions on the box for the amount needed. Additional oil may be needed according to the box directions.
